Another day in quarantine. Do you find yourself cooking more? Need something different? Do you love buffalo chicken? If you do then I have a recipe for you!

Tonight I made Buffalo Chicken Pasta for the first time and it was a hit, it was pretty easy to make and I hope you enjoy it!

8 oz of cream cheese

16 oz of Pepper Jack Cheese

1 box (1 lb) of Penne Pasta

1 – 1 1/2 cup of Olive Garden Ranch (you can use a different brand, but this brand is so good)

1 – 2 lbs of chicken tenders

6 oz of Frank’s Buffalo Sauce

Cook your chicken tenders in a little olive oil be sure to salt and pepper them. Once they are done and are tender enough to cut, drain and shred.

Let your cream cheese set out at room temperature while you prep the chicken. Then place in a large bowl.

Cook your pasta and then drain.

Pour the hot pasta over the cream cheese to soften it up more and stir well. Then add 6 oz (half a jar) of Frank’s buffalo sauce and ranch dressing. Stir well then add in 8 oz of Pepper Jack cheese and stir well again. Once it’s all mixed, place in your 13×9 inch casserole dish, lightly sprayed with Pam and then top with the remaining 8 oz of Pepper Jack Cheese. Place uncovered in the oven at 350 until the cheese is melted or approx 15-20 minutes. Now enjoy!
